I have been using CAPCO Japan-made boning knives for over 20 years. Not only are they sharp, but they sharpen easily with inexpensive hand sharpeners. The handles are comfortable. I think they are a great value. -

Many people do not know what size disher to purchase. The higher the number scoop, the smaller the size.The size of an ice cream scoop is measured by how many scoops will be gotten from a quart. A #50 disher should get 50 scoops from a quart of ice cream. Most ice cream parlors use a #16 or #20 disher. Italian ices are usually scooped with a #24 disher. Diners will generally use a #8 or #10 for the cottage cheese on a salad plate. Cookie dough will be dished out in scoops from #70 to #100.
